Roasted Tomato & Pepper Soup
The bitter chill of winter has settled in. Here in the Midwest, we were blessed with a few warm days at the beginning of the month—but now the cold is in my bones, and viruses seem to be ravaging everyone around us. When that happens, I turn to warm comfort foods: soups, teas, and hot sandwiches oozing with gooey, melty cheese.
